Quark is actually a perfect white canvas you can imaginatively paint with fruit.
For the afternoons when sunlight leans against the windowpane and you long to stop time over a glass full of edible art. It is the ideal ritual for moments when you want to celebrate the beauty of the everyday and let yourself be carried away by the harmony of pure flavors and delicate petals.
The base for all variations is quark with yogurt and honey. To make the cream truly cloud-like, first briefly whisk the quark with yogurt and honey using a hand whisk. If you want to go even further with the design, use a pastry bag without a tip – the layers will be perfectly even and the glass stays clean, without smeared walls from a spoon.

Poppy Ritual
Ingredients:
- Base: quark + Greek yogurt (50/50), ground poppy seeds, honey, lemon zest.
- Texture: Favourite biscuits (butter or oat).
- Topping: Crunchy granola, nuts, flaked almonds.
METHOD:
- Poppy seeds: Scald with hot water or milk, let soak briefly, sweeten with honey.
- Cream: Whisk yogurt with quark, honey and lemon zest. Add poppy seeds and fold gently.
- Layering: Divide into glasses. Don't crush the biscuits to dust — break them into irregular geometric shards. This creates an interesting "terrazzo" effect in the cream. Top with granola, nuts and almonds.
Autumn twist: For a warmer flavor, place warm stewed plums with cinnamon at the bottom of the glass.

Cloud Cream with Crushed Strawberries
Strawberries + Rhubarb
Ingredients:
- Cream: quark + yogurt, honey, lemon zest and a few drops of juice.
- Fruit component: Fresh rhubarb, strawberries, mint, lemon.
- Topping: Crushed unsalted peeled pistachios.
METHOD:
Lightly cook rhubarb with strawberries, a little lemon and mint leaves. Sweeten only gently so the fruit stays "alive". Layer cream and fruit compote alternately.
Design tip: For a fine-dining look, slice one strawberry into extremely thin rounds and press them against the inside of the glass before filling with cream. The deep green pistachios at the end will create a luxurious color contrast with the red fruit.

Tropical Velvet: Pineapple & Snow
Pineapple + Coconut
Ingredients:
- Cream: quark + yogurt, honey, shredded coconut, lemon.
- Fruit component: Fresh pineapple, cane sugar.
- Spices: Whole cinnamon, star anise, cloves, Tonka bean (optional).
- Topping: Coconut shavings, mint.
METHOD:
Cut pineapple into cubes and stew with spices, sugar and a little water until soft. Allow to cool. Fold shredded coconut into the cream.
Architecture tip: Use coconut in the form of large shavings. Toast them in a pan for just a few seconds until golden. This creates a vertical element that "breaks" the surface of the quark and gives the dessert height.

Amber Orchard Cloud
Apple + Honey + Cinnamon
Ingredients:
- Cream: quark + yogurt, honey, lemon.
- Fruit component: Firm apples (ideally red), honey, ground cinnamon.
- Topping: Whole walnut halves.
METHOD:
Slice the apples into very thin crescents and lightly caramelise in honey with cinnamon. Toast the walnuts briefly in a dry pan.
Design tip: A caramelised apple crescent with a red edge pressed vertically into the cream gives the glass dynamism. The apple slices will shine against the white background like glass shards.
Chef's Tips: Edible Design in Blooms
Flowers are not just decoration — they are a component that must make sense both in flavor and structure.
Pansies
Queens of design. They have a delicate taste and amazing colors. Tip: Deep purple with strawberries, yellow-white with pineapple.
Nasturtium
Spicy, peppery flavor. Tip: Beautifully breaks the sweetness of honey in the apple cup (No. 04).
Dead-nettle or Acacia
Naturally sweet. Tip: White dead-nettle blossoms in poppy (No. 01) look like tiny pearls.
Borage
A visual gem with the taste of fresh cucumber.
- Design: The flower has the shape of a five-pointed star. Place it on the cream "upside down" — its black stamens will stand out as a graphic detail.
- Ritual: Freeze flowers into ice cubes and serve in clear water alongside the dessert.
Professional trick: Garnish only just before serving. The moisture from the quark could "burn" the delicate petals. This preserves their turgor – natural tension and freshness.
