Fluffy as a thought. Tender as a kiss below the collarbone. These aren't just eggs. This is coming home. Inspired by a breakfast in Copenhagen, where eggs were folded like silk.
Ingredients
Basic ingredients
- 2–3 Eggs
- 2 tsp Sour cream (tangy, not crème fraîche)
- a bit of Butter
- pinch of Salt
Optional
- to taste Parmesan
- to taste Fresh herbs (chives, parsley)
- pinch of Guanciale dust
- pinch of Truffle salt
Preparation steps
Preparing the mixture
Lightly whisk the eggs in a bowl with a fork, add sour cream and a pinch of salt. Don't mix completely – leave structure, so the layers can be recognized.
Slow and with feeling
Melt butter on low heat – no rush, no jerking. Pour the mixture into the pan and as soon as the edges start to gently set, gather the eggs toward the center with a spatula. Imagine you're folding silk. Or covering your lover's soul with a blanket.
Let it resonate
Turn off the heat just before completion – and let the eggs finish cooking. Just like words you don't say aloud, but they remain.
Serving
You can grate Parmesan on top, add chives. We recommend adding a small salad of romaine lettuce with Parmesan and focaccia.
Guanciale Dust
What you'll need:
- 50–100 g Quality guanciale
- Dry pan
- Paper towel or sieve
- Mortar or small chopper
Process:
- Precision in cutting: Cut guanciale into thin slices or small cubes.
- Slow and without fat: Slowly render in a dry pan on medium heat until crispy.
- Draining: Transfer to paper towel and let cool completely.
- Crushing with love: Crush in mortar to fine powder.
