This delicacy smells like summer on the coast of Lofoten. Delicate, fresh yet rich – exactly like lovers who met in a fjord. Scandi Love Shrimp is perfect for quiet dinners for two, or as a weekend treat with bread and white wine.
Ingredients (for 2 lovers)
Main ingredients
- 250g Peeled shrimp (cooked, chilled)
- 2 tbsp Crème fraîche or thick sour cream
- 1 tbsp Quality mayonnaise (or vegan version)
- 1 tsp Dijon mustard
Herbs & seasoning
- handful Fresh dill, chopped
- few drops Lemon juice + finely grated zest
- to taste Salt and freshly ground white pepper
- optional Thin cucumber slices
For serving
- to taste Crispy rye bread or pastries
Preparation method
Base preparation
In a bowl, mix crème fraîche, mayonnaise, mustard, lemon juice and zest.
Seasoning
Add chopped dill, season with salt and pepper to taste.
Combining
Gently fold in the shrimp (and optionally cucumber cut into thin slices).
Chilling
Let it chill for 15 minutes so the flavors merge like two breaths in a kiss.
Serving
Serve with bread, lemonade... or something even better.
TIP: How to gently defrost and cook shrimp in 10-15 minutes
What you need:
• bowl (not metal)
• cold water (really cold, not lukewarm!)
• strainer or sieve

- Pour shrimp into strainer – let them breathe freely
- Place strainer in bowl and cover with cold water so shrimp are completely submerged
- Stir occasionally so they defrost evenly
- In 10–15 minutes they're ready – springy, cold but not frozen
- Dry them with paper towel – we don't want to make soup from them
‼️ Never warm water – you'd hurt them (and yourself taste-wise too).
Put them in boiling salted water for 2–3 minutes max. You can add a slice of lemon, a few peppercorns, bay leaf – create a little ocean for them. Remove immediately and cool in cold water (stops cooking).

- Classic Scandi salad – in a bowl, with fresh bread, like Danish grandmothers

- Wraps with nordic touch – in thin tortilla with lettuce leaf

- Add a few drops of aquavit or prosecco to the marinade – we're not cooking, we're seducing
