What is it actually?
It's not strudel.
It's its essence. A whisper between apple and cinnamon.
It's thick, tender, fragrant… an extract of home. A Christmas elixir for body and nerves.
It's not baked. Not weighed. Not showcased. It just emerges — like the first snowflake on a window.
A recipe that doesn't need dough – just flavors that already know where they belong.

Ingredients for 2 souls and one Pagáč
Strudel base
- 4 larger apples
- 1 tbsp lemon juice
- 1 tbsp brown sugar
- 1 tbsp butter
- 1 tsp ground cinnamon
- pinch of salt
Flavor infusion
- ½ vanilla pod
- 1 tbsp raisins or cranberries soaked overnight in rum
- 2 pcs cloves
- 1 star star anise
- 2 tbsp apple must or cider
Thickening phase – condensation
- 2 tbsp heavy cream (33%)
- 1 tsp honey
For serving
- to taste roasted nuts (optional)
- to taste grated lemon zest
- to taste drop of cold cream
Preparation steps
Thickening memories
Peel apples, cut into small cubes. Not completely uniform – irregularity is part of the magic.
Melt butter in a pan → add apples, cinnamon, sugar, salt, lemon. Stir slowly – like listening to the first note of a carol.
Cover with lid. Let reduce for 7–10 minutes until you get a gentle scent of "already smells to the neighbors".
Extracting the soul of strudel
In a small pot add: vanilla, cloves, star anise, must and raisins with rum.
Heat – just below boiling point. Steep for 8 minutes. Strain.
Pour this liquid over the apples. Stir. Add cranberries.
Condensation
Stir in cream and honey. And now the magic:
Cook on very low heat and stir until a thick cream forms.
It shouldn't be liquid — it should have the texture of strudel filling without the dough. (About 10–12 minutes.)
Serving
Into small glasses / mini bowls. You're not looking for shape. You're looking for memory.
On top:
- ✔️ roasted nuts (optional)
- ✔️ grated lemon zest
- ✔️ drop of cold cream in the middle – like moon on snow
