September, but it doesn't burn. It excites, but it calms.
A drink that blushes like the first touch, that stretches into breath.
For two souls in the heat of the day. For a moment when the world slows down.
Ingredients (for two glasses)
Matcha foam
- 150 ml Plant-based whipping cream
- 1 tsp Honey (optional)
- 3 tsp Matcha powder
- 75 ml Cold full-fat coconut milk
Lemonade
- 400 g Chilled diced watermelon
- 200 ml Coconut water (chilled)
Preparation steps
Prepare matcha foam
Mix all foam ingredients with a mixer or by hand. Pour into a whipped cream dispenser (we recommend iSi Gourmet Whip (0.5 l)) through a funnel and strainer. Screw on the N₂O cartridge, shake well (8–10 times). Store in refrigerator.
Prepare watermelon base
Blend watermelon with coconut water in a blender.
Serving
Place a few ice cubes in the bottom of the glass, pour the watermelon juice through a strainer into a ¾ tall glass. Now conjure the green matcha foam. Garnish with a bit of matcha powder.
Enjoyment

Chef's tips
🍯 Honey
You can replace honey with agave syrup or omit it completely – the elixir is sweet anyway.
🌸 Garnish
If you have them, add rose petals or lavender flowers on top — for joy.
🥤 Serving
Serve in a tall glass with a glass straw and mindful silence.

It's best to drink with two people. But when you're alone, drink for all versions of yourself.
