About this recipe
When you want to create a midsummer evening mood — one that caresses you like a gentle sea breeze — make this simple, sensual version of tuna tartare à la Gaia.
This is not a recipe for a quick dinner.
It is a small ritual.
Ingredients
Serves 2 (for lovers)
- 200 g very fresh tuna (sashimi-grade if possible), cut into small cubes
- to taste good-quality extra virgin olive oil
- 1 shallot or spring onion, finely chopped
- a little chopped capers (just enough not to overpower)
- 1 cucumber
- 1 lime
- to taste black or white sesame seeds
- a little microgreens to garnish
- to taste sea salt and freshly ground pepper
Method
Cut the tuna into small, even, silky cubes. And as you do, think of the two of you. How each piece dissolves between quiet kisses like love that never falls apart.
Add the shallot, capers, olive oil, salt and freshly ground pepper.
Fold together with just a few gentle strokes. Let the tuna keep its texture and its dignity.
Slice the cucumber into thin rounds. And if you slip and they turn into half-moons? Who cares, when love already follows a circular path. ♾️
Plate the tartare using a ring mould, or simply as it comes. Like staying in bed in the morning with your hair undone.
Add a drop of lime juice right before the first bite. Because acidity is like flirtation — it enters the scene at exactly the right moment.
Garnish with sesame seeds and a few microgreens. Serve with toasted baguette, or even better, with lightly toasted butter brioche.
Chef's notes
Serving
Serve on an ice-cold plate or in a small stoneware bowl. Garnish with a lime slice, a few flakes of black salt, or a delicate vegetable crisp.
Secret ingredient
If you're feeling adventurous, add a single drop of rose water. It won't overpower the fish — it will only give it an unexpected floral trace.
To drink
Place two glasses of well-chilled white wine beside it — something that smells of the sea and memories. Eat slowly. This is not dinner. This is a ritual of closeness.
Conclusion
It is a quiet perfection that soothes the soul.
Love dissolved in slices of cucumber, in black sesame, in a touch of lime, and in one glance between bites.
Just add one extra drop of a smile.
