Oyster Mushroom in Silk (Elysium Style)

Elegant fusion between stir-fry and braised soup. Can be eaten with rice, noodles or just as is. This oyster mushroom isn't grandma's soup. It's a velvety Asian remix that embraces you and vibrates every sense.

Ingredients (2 servings)

  • 300–400 g oyster mushrooms, torn into "noodle" strips
  • 1 small onion (ideally shallot)
  • 2 garlic cloves
  • 1 tbsp fresh grated ginger
  • 1 tbsp sesame oil (or vegetable oil)
  • 1 tsp red curry paste (or more, depending on spiciness)
  • 200 ml coconut milk
  • 1 tsp fish sauce (or soy sauce for veg version)
  • juice from half a lime
  • salt, pepper
  • sesame seeds, cilantro or spring onion for garnish
  • rice or rice noodles as side dish

Instructions

Aromatic Base

Sauté onion, garlic and ginger in oil – until it smells beautifully, add curry paste.

Mushroom Magic

Stir in torn oyster mushroom, let it cook for a bit to release its juice and soften.

Velvety Sauce

Pour in coconut milk and some water (about 50–100 ml depending on desired thickness).

Seasoning

Add salt, pepper, fish/soy sauce. Let it simmer gently for about 10 minutes.

Final Touch

Finally add lime juice.

Serving

Serve with soul – rice, noodles or simply with a spoon straight from the pan.

Curry Paste Without Paste?

If you don't have any paste (red, yellow, green), make this instant homemade version – gentle, fragrant and exactly as creamy as you need:

🌿 Mix in a small bowl:

  • • 1 tbsp olive oil (or sesame for more oriental tone)
  • • 1 tsp ground turmeric
  • • 1/2 tsp ground ginger (or fresh grated)
  • • 1/2 tsp ground coriander
  • • pinch of cumin
  • • pinch of cinnamon or nutmeg (for silky tone)
  • • 1 garlic clove (crushed or grated)
  • • optional: a few drops of lime juice and piece of chilli

Mix into a thick paste – this is your curry paste. Fry it in a pan with onion and mushroom and let it all bloom.
You can also add a drop of coconut milk or plant-based cream for extra velvet.
And finally a few cilantro leaves and pinch of sesame.
