About this recipe

It starts with the scent of cucumber and ends with the rustle of cilantro. Shrimp are just guides – the main character is balance. Every ingredient has its reason. And yet it feels like no one planned it.

It didn't just bring me taste – it brought me relief. This dish took the day off my shoulders and put it in a pan. And then mixed it so it started to smell.

Ingredients for two (lovers)

Salad base

  • 300 g Glass noodles
  • 1 pc Carrot, julienned
  • ½ pc Cucumber, julienned
  • handful Fresh cilantro, chopped
  • handful Spring onion, chopped
  • few leaves Iceberg lettuce

Shrimp

  • 300 g Peeled shrimp
  • to taste Oil for frying
  • 1 piece Ginger, chopped
  • 2 cloves Garlic, chopped
  • to taste Fish sauce
  • to taste Salt and ground pepper

Dressing

  • 3 tbsp Soy sauce
  • 1 tbsp Fish sauce
  • 2 tbsp Cane sugar
  • 2 tbsp Sesame oil
  • pinch Chili flakes
  • 1 piece Ginger, grated
  • 2 cloves Garlic, chopped
  • a bit Lukewarm water to dilute

Garnish

  • to taste Unsalted peanuts, crushed
  • to taste Black sesame
  • pinch Chili flakes
  • to taste Rice vinegar

Preparation steps

Prepare vegetables

Julienne the carrot and cucumber. Put the carrot in a bowl and add 1 tablespoon of sugar, 1 tablespoon of rice vinegar and fish sauce. Let it rest and marinate.

Prepare noodles and lettuce

Tear the iceberg lettuce by hand and arrange as the first layer in bowls. Prepare glass noodles according to package instructions, drain, cool with cold water and arrange as two nests on the lettuce.

Assemble salad

Arrange the marinated carrot, cucumber, spring onion and fresh cilantro on the noodles. Distribute everything carefully but gently.

Prepare shrimp

Briefly sauté the shrimp in oil with chopped garlic and ginger. Season with fish sauce, salt and ground pepper. Fry for only 2-3 minutes to keep them juicy. Place them on the salad.

Prepare dressing

Mix all dressing ingredients until smooth. Start without water and gradually add until you reach the desired consistency. The dressing should be slightly liquid to distribute evenly.

Final touch and serving

Pour the prepared dressing over the salad. Mix thoroughly but carefully so all flavors combine. Toast the peanuts dry in a pan, let cool and then crush them. Sprinkle the salad with peanuts, black sesame and chili flakes to taste.

Chef's tips

🍋 Extra juice

For another layer of flavor, add a few drops of fresh lime and mung bean sprouts at the end.

🦐 Shrimp

Don't overcook the shrimp – they will become rubbery. 2-3 minutes per side is enough.

🥜 Peanuts

You can replace peanuts with cashews or hazelnuts for a different character.

🌶️ Heat

Add chili flakes gradually – everyone has a different heat threshold.
